This Single Cask Release matured in a Bourbon Cask with a long finish in a Caribbean Rum Cask was specially selected by Head of Maturation, Paddy Foley to celebrate the fantastic achievement of Cumann Caide na Gaeltachta becoming Seaimpíní Chraobh Idirmheánach na hÉireann 2026.
Every Single Cask whiskey release from Dingle Distillery is a unique and singular expression which can never be replicated. Like standing victorious at an All-Ireland Final, Dingle Distillery crafts whiskey by hand, guided by patience, integrity and a deep sense of place.
This Single Cask Release was initially matured in a Bourbon Cask which laid down a foundation of vanilla, oak and gentle sweetness.
Then, this Single Malt was given a finishing period in a Caribbean Rum Cask to introduce subtle tropical fruits and soft spice, enhancing the complexity without overshadowing its original sweetness. A truly unique Single Malt from Dingle Distillery to celebrate an equally unique achievement.
TASTING NOTES
NOSE: Aromas of ripe tropical fruits, dark sugar, and rich vanilla pod.
PALATE: Gives way to sweet raisins, runny honey, warm, freshly baked banana bread.
FINISH: Long with soft warming spice and a lingering toffee sweetness.
ABV: 58.5%
